Back To School – Lunch Ideas!

We were always the kids in school who got cafeteria breakfasts and lunches because it was FREE! I think that is the exact moment in my life when I became obsessed with packaged foods LOL I’m not kidding, I love cafeteria food, airplane food, gas station food… maybe I just love food. That could be it too.

But I’d always envied the kids whose parents packed them a Lunchable, with a juice box, and a treat. Well baby is all grown up and thank goodness as an adult I can just relive all those moments and make them MY WAY! You want chocolate for lunch?! No problem!

 


Packing an adult version of the Lunchables is super easy- you basically deconstruct a sandwich 😉 Throw in some nuts + a treat and you’re ready to go!

So the deal is, I really try to have a lean protein, complex carb, and healthy fat at every meal. Emphasis on ‘try’. Sometimes it doesn’t happen and I’m eating a protein bar or a a bento box from Starbies. I know the ‘lean protein, complex blah blah blah‘ is all I talk about, but it’s true! It’s how I help ensure I’m getting in all my nutrients AND helps me be flexible for when I want pizza or a dessert. Or both.

Some ideas for quick and easy back to school lunches for yourself, your kiddo, or your college student is:

  • deconstructed sandwich + veggies + almond butter bar + assorted nuts
  • pb&j + fruit + chocolate (this is from Trader Joe’s and one entire bar is 100 cals) – not that I’m counting, but if you were, there you have it <3
  • tuna salad + corn & black bean medley + leafy green friends
  • almond butter + rice cakes + fruit
  • yakisoba noodles + veggies + peanuts on top or sunflower seeds  (only thing not pictured. we actually at them for lunch and Joe didn’t know it was for this post *face palm)

If you or your kiddo is a picky eater, swap out the boring fruit they won’t eat for blueberries or strawberries. Corrine would eat those without fail while she avoided her green beans. She also really loved fried rice instead of yakisoba noodles so try that too! Mac and cheese and hotdogs were a staple in my daughter’s child hood (and still are lets be real) because as long as she was eating I didn’t care what it was. She was EATING … hallelu!

BACK-TO-SCHOOL SURVIVAL WITH SOFFIO!!!

It’s here! The Fall semester has started and whether you’ve started a new year or a new semester, this is for YOU!

Since my Corrine starts college in January and we’ve been preparing for her new schedule, I’ve compiled my go-to, must-have survival items! This will help you from having any mid-day breakdowns!

  1. Phone case – because running. You’re given 3 minutes to run from class to class, across campus, backpack flinging, phone flying . . you’ll thank me!
  2. A hanging locker mirror – because teeth and face check!
  3. A bold backpack – because you are bold and you are you! Details on how to win this Soffio flight bag, just keep swimming reading!
  4. Some headphones– because teachers, and when you’re done taking your test or you’re running through the halls, just zen out to some Enya . . or whatever the cool kids are listening to these days!
  5. Pencils– because don’t be THAT kid asking for pencils AND a sharpener all the time.
  6. Folders– because organization. And you’ll thank me when you take this madness into your adult life.
  7. A Planner – because organization. Without a plan you have all of this stuff, but what are you going to do with it?! Exactly. Planner.
  8. Sunglasses – because teachers. They can totally see when your eyes are closed, so may I suggest that you get a full nights rest. At night. At home.
  9. Highlighters– because note taking. And highlighting things like, “what is pi?!”. You’ll get it when you’re sitting at a diner ordering pie.
  10. A fun Pencil Case– because stains on your pocket protector are a no no. Also it doubles as a makeup case for things like gum and deodorant. Because mid-day BO is also a no no.
  11. Paper– because don’t be THAT kid, asking for paper and pencils all the time.
  12. Flash cards– because tests. Your school years are all about note taking and test taking. Trust me and just know that you have to memorize things before they fly away from your mindspace.
  13. Stapler– because binding. Putting all of those notes and papers together will require staples. So don’t forget those either. Mkayyy!

Tadaaa! Now you won’t have any meltdowns at school because you’re fully prepared!

BACK-TO-SCHOOL STYLE WITH CORRINE!

The new school year is almost here and whether your child is starting a new year at middle school, high school, or college, every parent knows that the most fun part about prepping for a new year …  is the shopping!

I remember when I was younger, my siblings and I would nag and beg our parents to take us school shopping because we just couldn’t wait to get new clothes, new shoes, and new supplies! It was the most exciting part about it all! We loved organizing our pencil cases and putting paper and folders into our new binders, and my sister and I especially loved picking out our outfits for the first day of school!

Corrine’s style is much different from mine at her age. I remember color coordinating purple and pink leg warmers to match my purple skirt and pink teeshirt! It was the style of the ’90s and I was all about that side pony tail … and in my defense, the side pony was the modern look of the times! Corrine is much more fashionable than I; she loves creating looks that fit her personality and that speak to the vintage side of her.

This year, her style was influenced by the ’70s and the ’70s modern revival that we’re seeing trend around, which inspired her to create this year’s theme. Since Sears is a great destination for sophisticated and stylish clothing, off we went!


This year’s theme is representative of Corrine’s love of vintage fashion, and she paired each look with some modern pieces to make them her own. We can thank Bongo Girls and Canyon River Blues for this look, featuring these high-waisted shorts, a simple tee, and this crochet fringe cardigan. She paired this ensemble with these black ankle booties and a bolo tie. (The booties are so versitile and you’ll see them again soon!)

The shorts in particular gave this outfit a ’70s revival feel; high waisted with a V-knotched zipper, Corrine loved how simple and classic this was. The “pardon moi” tee has short sleeves and keeps the aesthetic simple with its muted burgundy lettering. She reminded me that this cardigan is perfect for cold classroom temperatures, and that comfort is everything when choosing campus walking shoes.


Keeping with the ’70s theme for this second ensemble, Corrine paired these black Bongo Girls skinny jeans with this white, loose-fit peplum blouse. She brought back the black booties since they pair so easily with everything, and topped the look off with a very simple yet edgy choice for an accessory. She tied a black-and-white bandana around her neck instead of opting for a simple necklace, and added a few stacked rings to fit this relaxed theme.

Corrine jumped for joy over these pieces, and I jumped for joy since we paid under $100 for both of these outfits! What made me most happy was how excited she was to put these looks together! They represent her funky and relaxed personality, and she has a special way of adding her own personal edge to everything she wears. Proud mama over here!
